Apple Cider French Toast

On it’s own French toast or pain perdu as it is called in France, is a classic worth celebrating. There have been many iterations by chefs all over the world. We like to celebrate the fall with apple cider french toast and the apples and juices that are best enjoyed for a short time when the weather changes. Of course this can be enjoyed year round, but this recipe is especially great in autumn.

Ingredients for Apple Cider French Toast

The ingredients here are pretty standard. The exception is that we like to use heavy cream here in place of milk, since we are adding a cider and don’t want the batter to become too watery. We make some other recommendations below as well to spice things up:

  • Apples. The sky is the limit here, but a great firm apple such as Jonathan, Rome, Braeburn, or Pink Lady work great as we lightly caramelize them and these keep their texture.
  • Maple syrup. What a great flavor profile! Maple, apple, cinnamon, cider…. great together!
  • Apple cider. We like to get the farm fresh raw apple cider that has been pressed with no additives. Its perfectly sweet on its own and you can control the amounts of spice. If you have cider that has already been sweetened or with added spice, consider removing or lessening the cinnamon and other ingredients.
  • Butter and cream. You could remove these and replace with coconut milk and oil for a non dairy french toast. However the eggs are necessary.
  • Brioche bread is great for making apple cider french toast. It tends to soak and hold batter very well. You can opt for healthier options such as wheat bread and the end result will still be wonderful. Brioche will usually lead to the best results however.

Other additions to consider for Apple Cider French Toast

There are a few more ingredients you can use to make things more daring!

  • Use some spirits such as brandy, cognac, or whiskey which work great with apple cider. There are pear liqueurs that work well here also. You can add these to the batter in small quantities.
  • Add a few dollops of whipped cream, or mascarpone cheese
  • Add other aromatic spices, such as clove, star anise, or grains of paradise to the batter
  • Use grated citrus zest, such as orange or lemon to the batter
  • Sprinkle nuts such as crumbled pecan or hazelnuts over the finished product
  • Substitute the sugar with molasses or piloncillo Mexican sugar

Equipment

1 rubber spatula
1 Non stick pan
1 small sauce pan

Ingredients
  

  • 6 pieces Brioche bread sliced
  • .5 cups Heavy cream
  • .5 cups Apple cider preferably raw unprocessed cider
  • 1 tbsp Sugar
  • 1 tsp Vanilla
  • .5 tsp Cinnamon ground

For the apple syrup

  • 1 each Apple
  • .5 cups Maple syrup
  • 1 tbsp Butter

Instructions
 

  • Prep the ingredients. Cut the apples into small cubes.

  • In the small sauce pan, melt the butter and gently caramelize the apples. When they are golden brown, remove from heat and add the maple syrup.

  • Meanwhile, whisk the egg, milk, cider, and cinnamon in a bowl.

  • Dunk the slices of brioche in the batter and allow to soak for about one minute before cooking. Heat a non stick pan over medum heat and melt the butter. Cook the slices about 2-3 minutes on each side, until they are cooked through but still moist. Place on a plate and garnish with the apple syrup. Garnish with powdered sugar if desired.
