Banana pecan waffles are a perfect subtle treat fresh from the iron. They are really easy to make and with about 20 minutes and a little effort you can have warm crunchy-sweet-soft breakfast pastries in no time! Restaurants often include waffles on their menus because they are easy to make fresh and serve piping warm. The nuts are optional but we love the flavor combination. These waffles are not overly sweet or banana-y. They have the perfect balance of subtly of each. We like to serve them with maple syrup!
Some other ideas to add to Banana Pecan Waffles
Banana pecan waffles are great on their own, but here are a few ideas and toppings to make them even more fun!
- Add a touch of peanut butter to the batter when mixing the wet ingredients.
- Add cinnamon to the batter with dry ingredients
- Add whipped cream on top
- Add a pat of butter on top while warm
- Add a few drops of distilled spirit such as brandy or banana liqueur to the batter
- Add a sweet triple cream on top as a smear such as mascarpone. Cream cheese can also work if left at ambient temperature
- Add crushed banana chips on top
- Use agave, honey, or molasses in place of maple syrup

- 2 pieces Bananas ripe of soft, not green
- 1.75 cups All purpose flour
- 2 tbsp Butter
- .25 cup Sugar
- 1.25 cups Whole milk
- 1 tbsp Baking powder
- .5 tsp Vanilla
- 2 tbsp Powdered sugar optional, for garnish
- .5 cup Pecan pieces optional, for garnish
- .5 tsp Sea salt
Instructions
- Prep the ingredients. Melt the butter in microwave or small sauce pan over low heat.
- In a small bowl, whisk the flour, baking powder, and salt. In a separate bowl, mash the bananas with a fork.
- Add the sugar, eggs, and vanilla and whisk. Meanwhile preheat the waffle maker.
- Mix the flour mixture from the other bowl into the wet ingredients. Mix until there are no lumps, but do not overmix. Pour or scoop the batter into the maker. Depending on the type, we used about 5 ounces to fill ours. Cook according to the instructions on your maker, or until light goes off.
