Sweet and Spicy Gochujang Ketchup

With this recipe we show you how to make the eponymous sweet and spicy gochujang ketchup. With just a few ingredients you can make a great knock off to the famous glazes used in Korean fried chicken outlets. This sauce is so rich and decadent that you will find its hard to resist on fried chicken, chicken wings, pork belly, and other rich foods. It has such a great hot-sour-salty-sweet profile that it can go up against the fullest textures and proteins.

Sweet and Spicy gochujang ketchup has become a cult obsession for those who frequent the crackling Korean fried chicken restaurants. Now you can make it at home in just a few minutes with several ingredients and enjoy it without going out to eat. It keeps for weeks in the fridge too for when you’re feeling indulgent!

Let’s talk about the ingredients

Gochujang comes in many forms with many brands and spice levels. The spice level will usually be indicated on the label. Despite its reputation it really isn’t too overwhelming out of the box unless you opt for the full spice variety. That being said it transforms when added to heat- add just a little to a soup and it gets very spicy quickly. In this recipe for sweet and spicy gochujang ketchup we won’t be cooking the paste and opt for the milder version so it really isn’t too bad. Acids such as vinegar and citrus also bring out the spice levels.

What is gochujang? It is a very versatile paste made from fermented soybeans and chiles often used in korean food. Gochujang does contain a lot of sodium but also has positive health attributes including vitamin C. It also contains sugar but is often balanced with some sweetness. The lime ads some acidity to also elevate and balance the overall richness of the sauce.

This sauce works great on the best fried chicken you will ever eat and crock pot chicken wings. It also works great on fried tofu and tempura vegetables such as cauliflower and sweet potato. And of course, french fries!!!

Ingredients
  

  • .5 cups gochujang
  • 1.5 cups ketchup
  • .5 cups water
  • 2 pieces limes
  • 3 tbsp sugar

Instructions
 

  • portion the ingredients, and squeeze the juice from the lime.
  • whisk all the ingredients together in a mixing bowl. make sure to dissolve the sugar.
